Minciunele

Ingredients:

  • 2 Eggs
  • 500 g Yogurt
  • About 5 tbsp sugar/honey
  • About ¼ cup vegetable oil
  • 900g Flour
  • 1 tsp Baking soda
  • ¼ tsp Salt
  • Lemon zest and lemon essence
  • Oil for frying

Whisk the eggs, sugar, and salt until everything is dissolved. Add yogurt, lemon zest, and lemon essence, whisking everything together well.

In a separate bowl, mix flour and baking soda together. Slowly add this to the wet mixture while mixing. Mix in as much of the flour as possible, then turn the dough out onto a floured surface. Gently knead the remaining flour into the dough until the lumps are gone and it is no longer sticky.

Roll out the dough to about a ½ cm thickness. Cut into strips approximately 1½ to 2 inches wide. Cut these strips on an angle to create diamond-shaped pieces of dough.

To fold, make a small hole in the centre of the diamond. Take one tapered end of the diamond and pull it through the hole and straighten the piece out, creating an elongated twist. Fold each diamond in this way. See the picture below for a bit of an idea.

Heat the oil to a good temperature for deep frying. Place each dough twist into the oil and fry until both sides are golden brown. Remove from oil and let as much drain as possible, then place on a paper towel to dry.

Enjoy with jam, peanut butter, anything you can think of!
